Tomatoes are a summer garden favorite.  When I plant the little seedling each year it seems so small but soon it doubles, then triples in size and before long the bushes are full of green little tomatoes.  I am always amazed at how much they produce.  My 6 little plants are packed, with tomatoes so large the plant is drooping over.

 

So I thought this new recipe would be a perfect way to use up some of those extra tomatoes.

 

Sweet Bruschetta Chicken(servings 4)

 

 

Ingredients:

  • 3  chicken breasts
  • 2 Tbs. olive oil
  • 5-8 tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 small red onion, chopped
  • 2 tsp. balsamic vinegar
  • 1/4 Tsp. sea salt
  • 1/4 Tsp pepper
  • Handful basil, chopped

 

 

Directions:

 Preheat oven to 400 degrees F.  Drizzle 1 Tbs olive oil over chicken breasts, and season with salt and pepper.  Bake for about 10 minutes. While chicken is cooking combine chopped tomatoes, garlic, onion, olive oil, balsamic vinegar, sea salt and basil in a bowl. After 10 mins pull the chicken out of the oven, flip and top with the bruschetta mix and cook for another 15 or until the juices run clear.
