Tis the season of delicious sweet oranges. This soft and fluffy cake brings in the seasonal flavors perfect for your holiday dinners.

Ingredients

  • 6 small oranges (peeled)
  • 6 Egg
  • 1/2 cup maple Syrup
  • 1 tsp baking powder
  • 2 cups almond flour or 1 1/2 cups cassava flour & 1/2 cup coconut flour
  • 1 tbsp arrowroot powder (for garnish, optional)

Directions

  1. Place the peeled oranges in a pot and cover with water. Bring the water to a simmer and cook for 45 mins. Drain the water and transfer the oranges to a blender. Blend into a purée and set aside to cool.
  2. Preheat the oven to 375ºF Line a bundt cake pan, springform cake pan or 9×9 pan, with parchment paper.
  3. In a mixing bowl, whisk together the eggs, orange purée, maple syrup, and baking powder. Mix in the almond flour until well combined. Transfer the batter to the pan.
  4. Bake for 20 to 25 minutes, or until brown. You can add Sliced oranges or clementines on top of the cut slices or on the side & dust of arrowroot flour.
