Carrot cake is truly one of my favorite desserts. I must confess I really love the rich, creamy cream cheese frosting. And when I would normally eat carrot cake I would make sure to have a little frosting on each bite. While I am not able to eat traditional carrot cake or the rich, creamy cream cheese frosting I have found my new recipe to be the closest to that of the original.

I have created this recipe with options. I myself follow an AIP protocol while I am working on healing from my autoimmune condition. My family can eat eggs that I can not and is able to eat regular gluten-free flour which I am not able to use. So I have two options that will fit either paleo or AIP. I can’t wait for you to try it and let me know if you too fall in love!

Ingredients

1 3/4 cups tiger nut flour (AIP)or gluten-free flour

1/4 cup arrowroot flour

1 tsp baking soda

1/3 cup coconut sugar or maple sugar

2 tsp cinnamon

1/3 cup full-fat coconut milk(be sure to use some of the solid milk fat too)

1/2 applesauce

2 tsp vanilla

3 cups carrots (shredded )

3 eggs or (AIP gelatin egg )see notes

NOTE: For gelatin, egg mix 3 TBSP unflavored gelatin and 1/2 cup water in a saucepan. Keep mixing as it will start to set quickly, let it start to bloom. Mix until dissolved then heat over medium heat, continuing to mix until liquid and powder are dissolved and warm. Set aside

Frosting

1/2 cup coconut butter

1/4 cup full fat coconut milk

1/4 cup honey or maple syrup

1 tsp vanilla

1 1/2TBSP lemon juice

Directions:

Preheat oven to 350 degrees.

If using egg alternative mix the gelatin and water in a saucepan. Stir to combine and let bloom. Note: keep stirring it will start to set quickly. Once it is combined and ready heat over medium heat stirring until a warm liquid, set aside.

Mix all dry ingredients in a mixing bowl, set aside.

In a stand mixer add the wet ingredients minus the eggs (real eggs) you can add alternative eggs. Mix on low slowly increasing to a medium speed mixing until everything is combined. If using real eggs now add one egg at a time slowly continuing to mix. Slowly add in the dry mixture and mix on low-to-medium until combined.

Note: Be careful not to over mix if using egg alternative it will start to set.

Butter or use palm shortening to coat two 6″ round cake pans or one 10″ round cake pan. Sprinkle flour inside to coat and shake off the excess.

Add the cake mixture and bake for 30 mins or until a toothpick comes out clean. Let cool

Meanwhile, prepare the frosting.

1/4 cup coconut butter

1/2 cup honey

1/2 cup full fat coconut milk

1 tsp vanilla

1 1/2 TBSP lemon juice

Place all ingredients in a mix and mix until smooth. Place in refrigerator for 1+ hours to harden.

Place the bottom layer on a cake plate lightly frost then place the second layer and frost the remaining cake. Place in refrigerator to set.

This carrot cake gives you a sweet indulgence without jeopardizing your health or derailing you from your goals. The sugars I use in this recipe are more natural sugars less processed than cane, powdered or brown sugar which is usually used in most baking.
