Did someone say cookies for breakfast? Yes! But as a mom this recipe is approved for breakfast a snack or honestly anytime of day.

Depending upon what version of a paleo diet you are following these may or may not be compliant. Some paleo plans don’t allow for oats while others make an oat exception. I follow an AIP paleo plan so all grains are off-limits for me, however, the rest of my family follows a paleo plan and I allow oats in limited amounts as long as they are Gluten-free, Non-GMO.

What are oats?

Oats are a whole grain that is packed full of protein, yes protein. More protein than a cooked egg. Oats provide fiber, manganese, phosphorus, magnesium, copper, zinc, iron, folate, and B-vitamins. High in antioxidant and rich in soluble fiber helping to support gut health and constipation. They can help lower blood sugar levels.

In this recipe, oats are the foundation but I love the variety of these cookies. They are almost like a pot of soup that you can add almost anything you have in the pantry. The more the better. My daughter calls these trail mix cookies. For reasons, you will quickly see.

Paleo Monster Cookies

Ingredients: 18 cookies

1 cup gluten-free oats

1 cup gluten-free oat flour (you can make your own oat flour by placing oats in a Vitamix using the dry container and blending until a light flour). Or, you may purchase oat flour.

3 ripe bananas mashed

1/2 cup almond butter or nut butter of choices

1/2 cup raisins or any dried fruit

1/4 cup chocolate chips (we use dairy-free Enjoy Life dark chocolate chips)

1 Tablespoon maple syrup

1/8 teaspoon salt

Variation: Add in 1/4 cup nuts, dried cranberries, dried cherries, any dried fruit will be delicious

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl add oats, oat flour, mashed bananas, salt, raisins, chocolate chips, nuts, nut butter of choice, and maple syrup.
  3. Mix on low for 2-3 minutes then move onto medium for an additional 3 minutes. Making sure the mixture is well mixed.
  4. On a baking sheet drop cookies by the tablespoon.
  5. Place cookies in the oven and bake for 8-10 mins or until crispy and golden brown.
  6. Let cool and store in the refrigerator for up to 1 week or freeze.
