Cauliflower has become a staple in our home. You hear people joke all the time about how cauliflower can become almost anything you want it to be. It is pretty surprising honestly how cauliflower used to be a vegetable that I would cook from time to time steam it and when I was growing up it would be smothered in cheese sauce. Now I cringe at that thought and think of all the fun, new ways I can use this vegetable in place of another food. I love how versatile it is and how it will take on so many flavors and can be used in many cooking styles not to mention all of its incredible health benefits!

Benefits of Cauliflower

Cauliflower is loaded with health benefits. It is a cancer fighter since it is a cruciferous vegetable. Which contains sulforaphane, which is known to help reduce the growth of tumors as well as help to eliminate cancer stem cells.

It is loaded with fiber which is great for heart health & blood pressure. It contains a vitamin called Choline. Choline is a very important B vitamin that helps with the neurotransmitters and can improve cognitive function. Cauliflower contains a powerful nutrient known as indole-3-carbinol which adds in reducing inflammation. We all know to much inflammation is bad for our bodies. Cauliflower is low in carbohydrates and can help with weight loss due to its make up of folate, vitamin- c and Sulforaphane. Who doesn’t want a weight loss booster?
Cauliflower is a natural detoxifier and adds our body in phase 11 detoxification pathways. The Sulforaphane in cauliflower is also known to help protect the stomach by inhibiting the growth of unhealthy bacteria and protecting the stomach lining and aiding indigestion.

Cauliflower Rice Veggie Bowl serves 4

Ingredients

1 large cauliflower riced or 2 packages fresh/frozen cauliflower

1 cup spinach

2 cloves garlic (diced)

1 tsp garlic powder

4 tbsp olive oil or coconut oil (divided)

1/2 sweet onion diced

2 tsp salt(divided)

juice from 1 lime

1 cup Brussel sprouts chopped into quarters or thin strips

1 large sweet potato diced into small squares

1/2 cup shredded carrots

Directions

1 cup shredded chicken/ meal of choice or its a perfect meal to go meatless

In a large pan over medium heat add 1/2 the oil slowly warm, add chopped sweet potatoes 1/2 the salt(1 tsp) & garlic powder, cook until fork tender. About 1/2 way through adding the Brussel sprouts and the shredded carrots, stirring and continuing to cook until desired tenderness about 30 mins.

Meanwhile, In a large saucepan over medium heat add the remaining oil, garlic & onion. Cook until translucent, about 5 mins. Add in the cauliflower rice stirring to combine the ingredients. Continue to cook being careful not to burn but allowing the rice to get crispy. When the rice is almost done add in the chopped spinach mixing so the spinach will start to wilt and cook slightly. Remove from the heat.

When all the ingredients are ready in a bowl layer the rice on the bottom, then the veggies, and top with shredded chicken. Put a squeeze of lime on top and for an added healthy fat some slices of avocado.

Dinner is ready. I love to double this recipe and have leftovers for lunch!
