I will start by saying The first time I made these grain-free tortillas my family loved them. I can’t keep them on hand no matter how many I make. They fall in love with them more and more each time.

I will admit there are many grain-free tortillas out there. And since going grain-free I have been an avid fan of several brands(I still am). However, I really wanted to be able to make my own with only a few ingredients and create that homemade tortilla fresh, warm, deliciousness!

I am not only grain-free but I also follow an AIP(autoimmune protocol lifestyle) which means limited to no nuts. Most grain-free options are off-limits for me. You will find most of the recipes I use either cassava or tigernut flour of both. From time to time I will use coconut flour but I find that coconut flour can be strong and take over the recipe.

Instructions
  1. In a large mixing bowl add flour and salt.
  2. Add oil and water.
  3. Mix all ingredients with a fork then using hands form into a ball making sure the ingredients are mixed well and the ball is smooth.
  4. Over low to medium heat pan or griddle.
  5. Divide dough into 6 small balls. Using a tortilla press or your hands pat the dough into small, round circles. Continuing to flatten and flip the dough so it does not stick to the counter. Continue to flatten and flip until the desired thickness.
  6. Place tortilla rounds in pan or griddle. Allow to cook flipping after 2-3 mins or until golden brown.
Recipe Notes

These can be made ahead of time and then reheated over low heat for approximately 1-2 mins.  They can be stored in refrigerator for up to 5 days.
